Just the sound of it
Whether the osso
Or just buco
Just say it
Let the words swirl
Alla Milanese
I know how it tastes
But what does it mean
Osso more or less ox
Shank or veal tail
But what’s with buco
Can’t find a definition
Lost in translation
A chef would just laugh
Flailing his hands
You know buco
It’s a the buco
That’s a goodah-nougha
Years ago in Palm Beach
An upscale ristorante
Dining with mom|
Intrigued by the
Very sound of it
Always a treat
Gave it a try
Sucked the marrow
A special treat
Out of the bone
Slow cooked
Have done it myself
So many times
With wine and tomato
Onions for sauce
Simmered for hours
Tough cut of meat
Bringing out flavor
Best over pasta
Risotto, polenta with gremolata
Astrid found mine tough
Needs more cooking
You gottah teeth
Give it a chew
There it was on the menu

Braised pig’s tail
Is there such a thinga
While not in Rome
Boston in fact
Gave it a try
She had the fish
All I can say is
Simply Delicioso
Oh mama mia
On a bed of barley
Sucking up sauce
Braised Brussel sprouts
The incredible elegance
Dining at our club
Living way too well
