Corona Cookbook: Stuffed Squid

It’s always a high point in the culinary world when I make stuffed squid.

It’s been a special dish in our family since before I was born.

It’s not everyone’s cup of tea, but, if you are a fan, there is not much better.

It’s actually simple to make and doesn’t take long to cook.
6-8 cleaned whole squid bodies
1/2 onion minced
4 cloves of garlic minced
1 rib of celery
6 cherry sliced tomatoes
Red pepper flakes to taste
Lemon zest
Chopped parsley
4 Tbs. olive oil
8 oz. Tomato sauce, homemade or store bought
1/2 cup breadcrumbs
Mix all ingredients together minus tomato sauce.
Open the end of the squid body and insert the mix
When finished, put the squid in a baking dish, with tomato sauce on top. Cover with aluminum foil
Cook at 375 for 25 minutes.
Boil spaghetti and top with the stuffed squid, pasta water and the tomato sauce.
