New England Cod with Asparagus
Cook asparagus in an inch of boiling water for ten minutes. Top with a mayonnaise, garlic, lemon juice mixture.
Bread fish with fish fry after dipping it in a melted butter, lemon juice, olive oil mixture. Sauté for five minutes on both sides and put pan in oven at 400F for ten minutes. Before putting in the oven top with the melted butter, lemon juice and olive oil mixture. Add slivered garlic to the mix.
Take out if the oven and serve with the asparagus. A Sauvignon Blanc pairs well with this dish.
Cut eggplant lengthwise. Add salt to both sides to sweat. Dry off and brush both sides with olive oil, pepper and oregano. Put in oven at 400F for 15 minutes, turn over sliced and cook for 10 more minutes.
Take out of oven and begin to build.
Put sauce, homemade or store bought on the bottom layer, top with eggplant, sauce and mozzarella and Asiago cheese. Repeat twice, ending with cheese on top. Add panko or breadcrumbs with dried basil and minced garlic.
Cook at 400F for 30 minutes.
Take out and serve
